Shelby has been with us since our very first day opening back in November 2017! We asked Shelby a few questions to so you can find out more about her:
What would people be surprised to know about you?
I once made 57 cocktails in less than 7 minutes on a packed out night
in Old Havana (pre-COVID of course!)
What is your favourite drink in Old Havana?
It has to be the Cinnamon Bun Martini from the Old Havana signature
menu. I actually created it myself because it reminds me of Christmas
and it's been a firm favourite on the menu ever since.
How did your Malaguena Salrosa invention come about?
My favourite band covered the song so I wanted to name a cocktail after it. Started looking into fruit/herb pairings. Originally wanted to use sage but it was too overpowering. Eventually settled on tarragon. Used maple syrup to sweeten it as its a bit more flavourful than simple syrup. Also, I love tequila
If there was a cocktail named after you, what would it be and why? Definitely a Snowball which is Amaretto, Chambord, Milk and Cream. My staff would say this if you asked them as they call me the "Ice Queen" #oldhavana #swansea #cardiff
