Paella preparations are in full progress since yesterday. We cook our all stocks from scratch.
Langoustine heads, fish bones, chicken carcasses. This way, each and every part of the animal gets used.
For the stock for the vegetarian paella we use roasted vegetables.

Paella fish: gamba, clams, langoustines and calamaris
Paella chicken: chicken thighs, artichoke and string bean
Paella vegetarian: string bean, cauliflower, bell bell pepper, artichoke and zucchini
