At Home with the McGettigan's Crew
Now that a lot of us are back in the office, midweek meals need to be quick and easy to make! With that in mind, our Chief Operating Officer Ray Shannon & his gorgeous daughter Sophie, show us how to make Chinese Wok-Fried Prawns. From start to finish this dish takes 15 minutes max so there's no excuse not to get cooking!
YOU'LL NEED:
- 5 Spring Onions, cut into 4cm pieces
- 1Chilli, halved
- 2 tsp Ginger, chopped or grated
- 1 Red Onion, chopped
- 500g uncooked Prawns
- Cooking Wine (can be substituted for white wine or even beer)
- Salt to taste
METHOD:
- Prepare the vegetables and spices and set aside
- You will need to devein the prawns before cooking. To do this use a small, sharp knife and make a shallow cut along the length of the black line, then lift it out using the tip of the knife
- Take your chopped veg & add to a hot wok, stirring continuously
- Toss in the prawns and continue to stir
- Saute until they have turned a nice orange colour
- Add a sprinkle of salt and a generous dollop of Cooking Wine (or substitute)
- And there you have it, the perfect midweek meal in under 15 minutes!
